Step preview

  1. Pre-heat - 170°C
  2. Line a clean muffin pan in paper liners
  3. Add salted butter, all purpose flour, light brown sugar, ground cinnamon and rolled oats to a clean medium bowl
  4. Mix firmly until coarse crumbs form then set aside
  5. Add salted butter to a clean small bowl
  6. Melt in microwave and set aside - low heat
  7. Add banana to a clean large mixing bowl
  8. Mash
  9. Add granulated sugar and egg to the batter
  10. Transfer content of small bowl to batter and mix
  11. Add all purpose flour, baking powder, baking soda and salt to a clean medium bowl
  12. Whisk briefly until blended
  13. Fold dry ingredients into batter briefly
  14. Spoon batter into muffin pan
  15. Sprinkle topping with muffins
  16. Bake until skewer tests clean - 22 min, 170°C
