This Meatloaf is ideal for a low carb diet such as the South Beach. It contains Pork, Beef and Bacon, what more would you need? One loaf serves 4 adults with 2 slices each.
Ingredients
Ground beef250 g
Ground pork250 g
Onion1diced
Wholegrain mustard1 teaspoon
Fresh basil leaves20 gchopped
Jalapeño pepper1diced
Salt1 pinchground
Black pepper1 pinchground

Method
1. Add ground beef, ground pork, onion, wholegrain mustard, fresh basil leaves, jalapeño pepper, salt and black pepper to a clean large mixing bowl
2. Mix thoroughly until completely mixed then set aside
3. Pre-heat oven - 160°C
4. Line a clean loaf pan with bacon
5. Transfer meat to loaf pan and fold bacon on top
6. Roast - 1 hr, 160°C
7. Set aside
8. Turn out
9. Slice
