This Meatloaf is ideal for a low carb diet such as the South Beach. It contains Pork, Beef and Bacon, what more would you need? One loaf serves 4 adults with 2 slices each.

    Method

  • 1. Add ground beef, ground pork, onion, wholegrain mustard, fresh basil leaves, jalapeño pepper, salt and black pepper to a clean large mixing bowl
  • 2. Mix thoroughly until completely mixed then set aside
  • 3. Pre-heat oven - 160°C
  • 4. Line a clean loaf pan with bacon
  • 5. Transfer meat to loaf pan and fold bacon on top
  • 6. Roast - 1 hr, 160°C
  • 7. Set aside
  • 8. Turn out
  • 9. Slice
