Step preview

  1. Add all purpose flour, durum semolina flour, rye flour, water, milk, quick-rise yeast, kosher salt and olive oil to a clean stand mixer bowl
  2. Mix - 10 min, low speed
  3. Mix - 5 min, medium speed
  4. Let rise slowly in fridge - approx 12 hr
  5. Pre-heat oven - 230°C
  6. Divide evenly between
  7. Form carefully
  8. Set aside with kitchen towel - 45 min
  9. Bake until golden brown - 20 min, 230°C
