Step preview

  1. Get a clean stand mixer bowl
  2. Add ground all purpose flour
  3. Add ground durum semolina flour
  4. Add ground rye flour
  5. Add water
  6. Add milk
  7. Add quick-rise yeast
  8. Add kosher salt
  9. Add olive oil
  10. Mix - 10 min, low speed
  11. Mix - 5 min, medium speed
  12. Let rise slowly in fridge - approx 12 hr
  13. Pre-heat - 230°C
  14. Divide evenly between
  15. Form carefully
  16. Set aside with kitchen towel - 45 min
  17. Bake until golden brown - 20 min, 230°C
