This is a family recipe that uses the same batter as my Onion Bhajis. The baby corn gives this an extra crunch!

    Method

  • 1. Add gram flour, rice flour, cornflour, ground turmeric, ground cumin, ground coriander, cayenne pepper, ground ginger, fresh garlic, salt and baking powder to a clean large mixing bowl
  • 2. Mix thoroughly until well combined
  • 3. Add water to the batter
  • 4. Mix well until smooth
  • 5. Add sunflower oil to a clean saucepan
  • 6. Heat - medium heat
  • 7. Add baby corn to a clean medium bowl
  • 8. Transfer vegetables to batter
  • 9. Fry carefully until crispy then set aside
