Step preview

  1. Add golden caster sugar to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blitz - approx 10 sec, speed 10
  4. Then add fresh yeast, egg, ground nutmeg, water, butter and sea salt to the TM5 bowl
  5. Blend - approx 1 min, 37°C, speed 4
  6. Then add bread flour to the TM5 bowl
  7. Mix - approx 6 sec, speed 8
  8. Knead - approx 4 min, dough
  9. Flour a clean work surface lightly
  10. Transfer content of TM5 bowl to work surface
  11. Set aside until doubled
  12. Roll out into a rectangle
  13. Cut into rounds
  14. Set aside until doubled
  15. Add extra virgin olive oil to a clean large saucepan
  16. Heat - 170°C
  17. Transfer dough to large saucepan
  18. Cook until light golden - 170°C
  19. Remove
  20. Pat dry quickly with paper towels
  21. Dust with icing sugar gently
  22. Serve
