Step preview

  1. Fit the TM5 bowl to TM5
  2. Add golden caster sugar
  3. Blitz - approx 10 sec, speed 10
  4. Add fresh yeast
  5. Add egg
  6. Add ground nutmeg
  7. Add water
  8. Add butter
  9. Add sea salt
  10. Blend - approx 1 min, 37°C, speed 4
  11. Add bread flour
  12. Mix - approx 6 sec, speed 8
  13. Knead - approx 4 min, dough
  14. Flour a clean work surface lightly
  15. Transfer content of TM5 bowl to work surface
  16. Set aside until doubled
  17. Roll out into a rectangle
  18. Cut into rounds
  19. Set aside until doubled
  20. Get a clean large saucepan
  21. Add extra virgin olive oil
  22. Heat - 170°C
  23. Transfer dough to large saucepan
  24. Cook until light golden - 170°C
  25. Remove
  26. Pat dry quickly with paper towels
  27. Dust with icing sugar gently
  28. Serve
