I used to enjoy "windmill cookies" as a kid, which were essentially speculoos/biscoff with almonds on them. Yum!

  • Butter icon
    Butter7 tablespoonsroom temperature
  • Orange icon

  • Self raising flour icon
    Self raising flour225 g
  • Demerara sugar icon
    Demerara sugar95 g
  • Milk icon
    Milk3 tablespoons
  • Pumpkin pie spice icon
    Pumpkin pie spice3 teaspoons
  • Baking soda icon
    Baking soda½ teaspoon
    Method

  • 1. Add self raising flour, demerara sugar, butter, milk, pumpkin pie spice, baking soda and orange to a clean stand mixer bowl
  • 2. Mix - paddle attachment
  • 3. Cover with plastic wrap
  • 4. Set aside - 1 hr
  • 5. Pre-heat oven - 175°C
  • 6. Line 2 clean baking pans with parchment paper
  • 7. Flour a clean work surface lightly
  • 8. Transfer dough to work surface
  • 9. Roll out until 1/4" thick
  • 10. Cut out
  • 11. Transfer cookies to 2 baking pans
  • 12. Bake until browned and let cool - 10 min, 175°C
