Use a mandoline for super thin potato slices

  • Butter icon
    Butter75 gchopped
  • Potato icon
    Potato2.4 kgpeeled, sliced - 5mm
  • Single cream icon
    Single cream60 ml
  • Extra virgin olive oil icon
    Extra virgin olive oil2 tablespoons
  • Fresh thyme icon
    Fresh thyme4 sprigs
  • Bay leaves icon
    Bay leaves2
  • Black pepper icon
    Black pepper1 pinch
  • Sea salt icon
    Sea salt1 pinch
    Method

  • 1. Pre-heat oven - 180°C
  • 2. Grease a clean baking dish
  • 3. Add butter, single cream, extra virgin olive oil, fresh thyme and bay leaves to a clean saucepan
  • 4. Cook - approx 2 min
  • 5. Add potato to the baking dish
  • 6. Strain saucepan with sieve and continue
  • 7. Transfer content of saucepan to baking dish
  • 8. Add black pepper and sea salt to the baking dish
  • 9. Cover with foil
  • 10. Bake - 30 min, 180°C
  • 11. Remove
  • 12. Bake - approx 1 hr, 180°C
  • 13. Serve
