Tuna and Sweetcorn Sandwiches will always hold a place in my heart, but being vegetarian meant that I had to track down an alternative when cravings hit. This veggie tuna absolutely hits the spot — the tangy lemon, spring onion and celery give it it's flavor and the overall texture of the spread is absolutely perfect. If you want it to have a fisher taste, try adding dried nori sheets at the blending stage. Serve with soft wholegrain bread and fresh greens for a vegetarian tuna and sweetcorn sandwich!

Step preview

  1. Add canned chickpeas to a clean food processor bowl
  2. Pulse until just blended
  3. Add celery stalk, lemon juice, salt, black pepper and cayenne pepper to the food processor bowl
  4. Pulse until just blended
  5. Add mayonnaise to the food processor bowl
  6. Pulse until just blended
  7. Transfer the rest of content of food processor bowl to medium bowl
  8. Add canned corn to the medium bowl
  9. Mix until combined
  10. Serve
