  1. Prep and set aside green chili: seeded & sliced
  2. Prep and set aside onion: finely chopped
  3. Prep and set aside chicken thighs: skinned, boned & cubed
  4. Prep and set aside kaffir lime leaves: dried
  5. Prep and set aside green beans: halved
  6. Get a clean medium cast iron skillet
  7. Heat sunflower oil
  8. Add Thai green curry paste
  9. Add galangal
  10. Add prepared green chili
  11. Cook - 1 min
  12. Stir in prepared onion
  13. Stir in prepared chicken thighs
  14. Cook until light golden
  15. Pour coconut milk
  16. Pour chicken stock
  17. Add prepared kaffir lime leaves
  18. Add light brown sugar
  19. Add fish sauce
  20. Boil while stirring occasionally
  21. Get a clean slow cooker bowl
  22. Transfer content of medium cast iron skillet to slow cooker bowl and cover
  23. Cook in slow cooker until tender - 10 hr, low heat
  24. Stir in sugar snap peas
  25. Stir in prepared green beans
  26. Cook until tender - 15 min
  27. Add cilantro
  28. Get a clean medium bowl
  29. Spoon content of slow cooker bowl into medium bowl
  30. Serve
