This quick veggie bean chili is quick, easy and loaded with all the smoky flavors you'd expect from a good chili. Pile into warm bowls, top with cheese, sour cream and guacamole and serve with tortilla chips for scooping.

Step preview

  1. Add vegetable oil to a clean Dutch oven
  2. Heat
  3. Add onion to the Dutch oven
  4. Cook until softened - 5 min
  5. Add red bell pepper and garlic clove to the mixture
  6. Cook - 30 sec
  7. Pour canned chopped tomatoes into the mixture
  8. Season with salt & pepper
  9. Boil then reduce heat
  10. Simmer - 10 min
  11. Add canned black beans and canned corn to the mixture
  12. Cook until heated through - 4 min
  13. Divide
  14. Top with sour cream
  15. Sprinkle with cilantro and cheddar cheese
  16. Serve tortilla chips with the mixture
