  1. Heat olive oil to a clean large cast iron skillet
  2. Add whole chicken to the large cast iron skillet
  3. Fry until browned - 10 min
  4. Transfer content of large cast iron skillet to slow cooker bowl
  5. Heat olive oil to the large cast iron skillet
  6. Add onion to the large cast iron skillet
  7. Fry until lightly browned
  8. Add cider, dijon mustard and superfine sugar to the large cast iron skillet
  9. Season with salt & pepper
  10. Boil
  11. Transfer content of large cast iron skillet to slow cooker bowl
  12. Add chicken stock, carrot, celery stalk, lemon and tarragon to the slow cooker bowl
  13. Cover
  14. Cook in slow cooker until cooked through - 5 hr 30 min, high heat
  15. Transfer content of slow cooker bowl to serving plate
  16. Reserve
  17. Add crème fraîche to the serving plate
  18. Mix in
  19. Season to taste
  20. Serve
