Honey, apricots and pears lend their sweetness to this fresh, citrusy chicken dish. The sweetness is balanced beautifully with the addition of sour cream stirred in just at the end.

Step preview

  1. Prep and set aside chicken breast: skinned & boned
  2. Prep and set aside apricot: halved & pitted
  3. Prep and set aside pear: peeled, quartered & cored
  4. Prep and set aside fresh thyme: chopped
  5. Prep and set aside orange: juice of & zest of
  6. Pre-heat - 175°C
  7. Get a clean Dutch oven
  8. Heat olive oil
  9. Add prepared chicken breast
  10. Season with salt & pepper
  11. Fry evenly until light golden - 3 min
  12. Add prepared apricot
  13. Add prepared pear
  14. Add new potatoes
  15. Add onion
  16. Add prepared fresh thyme
  17. Add prepared orange
  18. Add wholegrain mustard
  19. Add honey
  20. Mix well
  21. Cover with foil
  22. Cook - approx 40 min, 175°C
  23. Stir in sour cream
  24. Serve
