Sweet peppers and tomatoes are roasted until tender and baked with salty chunks of feta and juicy olives in this simple take on a Greek salad. Serve with toasted pita breads to mop up all the wonderful flavors of Greece.

Step preview

  1. Pre-heat oven - 205°C
  2. Arrange tomato, green bell pepper and red onion in a clean baking dish
  3. Add garlic clove, dried oregano, extra virgin olive oil and salt & pepper to a clean medium bowl
  4. Mix
  5. Drizzle vegetables with oil mixture
  6. Bake - 10 min, 205°C
  7. Crumble feta cheese over the vegetables
  8. Arrange black olives in the vegetables
  9. Bake - 15 min, 205°C
  10. Serve with pita bread
