Just when you thought bread and butter pudding couldn't get any better! Studded with white chocolate and served with warm blueberry coulis, this is a comforting dessert that will keep you coming back for more.

    METHOD


  • 1. Add baguette to a clean heatproof bowl
  • 2. Spread with butter
  • 3. Layer
  • 4. Sprinkle with white chocolate
  • 5. Add egg yolk and superfine sugar to a clean small bowl
  • 6. Beat
  • 7. Add heavy cream and milk to a clean saucepan
  • 8. Boil and turn off heat
  • 9. Pour egg mixture into saucepan slowly while whisking
  • 10. Stir in vanilla extract to the saucepan
  • 11. Pour content of saucepan into pudding bowl
  • 12. Let rest - 10 min
  • 13. Cover with foil
  • 14. Add water to a clean slow cooker bowl halfway
  • 15. Cook pudding bowl until set - 4 hr 30 min, low heat
  • 16. Pre-heat broiler - high heat
  • 17. Add blueberries, superfine sugar and water to a clean saucepan
  • 18. Simmer - approx 15 min, medium-low heat
  • 19. Purée with stick blender
  • 20. Let cool then set aside
  • 21. Remove pudding bowl carefully
  • 22. Grill until caramelized - high heat
  • 23. Serve
  • 24. Sprinkle with blueberries
  • 25. Garnish with white chocolate
  • 26. Drizzle purée with tablespoon
