Turn shop-bought puff pastry into an simple but tasty tomato and basil tart. This recipe is ideal when you're having friends over for lunch. Throw together a quick salad while it cooks, and serve with a chilled glass of wine.

Step preview

  1. Pre-heat oven - 218°C
  2. Get a clean baking sheet
  3. Grease lightly
  4. Roll out puff pastry onto the baking sheet
  5. Press
  6. Freeze - 5 min
  7. Brush with egg
  8. Add mascarpone cheese, egg, parmesan cheese and fresh basil to a clean medium bowl
  9. Season with salt & pepper
  10. Mix
  11. Brush mixture with pastry
  12. Arrange cherry tomatoes in the pastry
  13. Drizzle with olive oil
  14. Bake until light golden - 25 min, 218°C
  15. Serve
