Step preview

  1. Heat vegetable oil to a clean large saucepan
  2. Add red onion to the large saucepan
  3. Sauté until lightly browned - 5 min
  4. Stir in curry paste, canned chopped tomatoes, canned chickpeas, vegetable stock and light brown sugar the large saucepan
  5. Boil then reduce heat
  6. Cover
  7. Simmer gently - 20 min
  8. Stir in kale the large saucepan
  9. Cook gently - 10 min
  10. Season with salt & pepper
  11. Serve
