  1. Prep and set aside canned chickpeas: drained & rinsed
  2. Prep and set aside kale: chopped
  3. Get a clean large saucepan
  4. Heat vegetable oil
  5. Add red onion
  6. Sauté until lightly browned - 5 min
  7. Stir in curry paste
  8. Stir in canned chopped tomatoes
  9. Stir in prepared canned chickpeas
  10. Stir in vegetable stock
  11. Stir in light brown sugar
  12. Boil then reduce heat
  13. Cover
  14. Simmer gently - 20 min
  15. Stir in prepared kale
  16. Cook gently - 10 min
  17. Season with salt & pepper
  18. Serve
