Sweet & Sour Chicken is a takeout classic, and this version is cooked low and slow in a slow cooker to allow the flavors to mingle and the chicken to tenderise. Chunks of bell pepper would also make a delicious addition.

Step preview

  1. Heat sunflower oil to a clean medium cast iron skillet
  2. Add chicken thighs to the medium cast iron skillet
  3. Fry until browned
  4. Mix in scallion, carrot and ginger to the chicken
  5. Cook - 2 min
  6. Stir canned pineapple and chicken stock into the chicken
  7. Add cornstarch, tomato paste and superfine sugar to a clean small bowl
  8. Mix in soy sauce and malt vinegar to the small bowl gradually
  9. Mix with tablespoon until thickened
  10. Stir content of small bowl into chicken
  11. Boil gently
  12. Add bamboo shoot and scallion to a clean slow cooker bowl
  13. Transfer chicken to slow cooker bowl and cover
  14. Cook - 7 hr, low heat
  15. Add snow pea and bean sprouts to the slow cooker bowl
  16. Serve
  17. Cook until tender - 15 min, low heat
  18. Mix well and cover
