Sweet & Sour Chicken is a takeout classic, and this version is cooked low and slow in a slow cooker to allow the flavors to mingle and the chicken to tenderise. Chunks of bell pepper would also make a delicious addition.

  1. Prep and set aside chicken thighs: skinned, boned & cubed
  2. Prep and set aside scallion: sliced
  3. Prep and set aside carrot: halved lengthways & sliced
  4. Prep and set aside ginger: peeled & finely chopped
  5. Prep and set aside bamboo shoot: canned & drained
  6. Prep and set aside snow peas: sliced
  7. Get a clean medium cast iron skillet
  8. Heat sunflower oil
  9. Add prepared chicken thighs
  10. Fry until browned
  11. Mix in prepared scallion
  12. Mix in prepared carrot
  13. Mix in prepared ginger
  14. Cook - 2 min
  15. Stir in canned pineapple
  16. Stir in chicken stock
  17. Get a clean small bowl
  18. Add cornstarch
  19. Add tomato paste
  20. Add superfine sugar
  21. Mix in soy sauce gradually
  22. Mix in malt vinegar gradually
  23. Mix with tablespoon until thickened
  24. Stir content of small bowl into chicken
  25. Boil gently
  26. Get a clean slow cooker bowl
  27. Add prepared bamboo shoot
  28. Add sliced scallion
  29. Transfer chicken to slow cooker bowl and cover
  30. Cook - 7 hr, low heat
  31. Add prepared snow peas
  32. Add bean sprouts
  33. Serve
  34. Cook until tender - 15 min, low heat
  35. Mix well and cover
