  2. Prep and set aside plum: firm
  3. Get a clean slow cooker bowl
  4. Pour white wine vinegar
  5. Add rosemary
  6. Add fresh thyme
  7. Pour superfine sugar
  8. Add bay leaves
  9. Add lavender
  10. Add prepared garlic clove
  11. Add salt
  12. Add black peppercorns
  13. Cover
  14. Cook in slow cooker while stirring occasionally - 2 hr 30 min, high heat
  15. Warm 3 clean jars - low heat
  16. Add prepared plum carefully
  17. Add rosemary
  18. Add fresh thyme
  19. Strain vinegar mixture into 3 jars evenly
  20. Seal tightly
  21. Let cool
  22. Store
