    Method

  • 1. Melt butter and olive oil in a clean Dutch oven
  • 2. Add Vegetarian Sausage, button mushroom and red onion and fry until lightly browned
  • 3. Add tomato paste, puy lentils, vegetable stock and dried oregano and bring to boil
  • 4. Reduce heat and cover
  • 5. Cook gently until tender - 20 min
  • 6. Add cherry tomatoes and cook - 5 min
  • 7. Pre-heat in broiler - medium heat
  • 8. In a clean medium bowl mix together garlic clove, butter and fresh parsley
  • 9. Butter ciabatta with herb butter and arrange on top of the stew
  • 10. Broil hotpot in broiler until ciabatta is toasted - 5 min, medium heat
  • 11. Serve the hotpot warm
