Step preview

  1. Add sunflower oil to a clean large cast iron skillet
  2. Heat
  3. Add onion to the large cast iron skillet
  4. Fry until softened while stirring occasionally - approx 5 min, medium heat
  5. Add garlic and mustard seeds to a clean small bowl
  6. Grind with mortar and pestle
  7. Transfer content of small bowl to large cast iron skillet
  8. Fry while stirring occasionally - 1 min
  9. Add ground turmeric, ground coriander and curry powder to the large cast iron skillet
  10. Fry while stirring occasionally - 3 min
  11. Add chicken thigh to the large cast iron skillet
  12. Fry while stirring occasionally - 5 min, high heat
  13. Add water and salt & pepper to the large cast iron skillet
  14. Boil and cover
  15. Reduce heat
  16. Cook gently until cooked through and turn off heat - 25 min
  17. Add plain yogurt to the large cast iron skillet and mix
  18. Serve immediately
  19. Garnish with cilantro
