  1. Prep and set aside onion: finely sliced
  2. Prep and set aside garlic: crushed
  3. Prep and set aside chicken thighs: boned & skinned
  4. Prep and set aside cilantro: torn
  5. Get a clean large cast iron skillet
  6. Add sunflower oil
  7. Heat
  8. Add prepared onion
  9. Fry until softened while stirring occasionally - approx 5 min, medium heat
  10. Get a clean small bowl
  11. Add prepared garlic
  12. Add mustard seeds
  13. Grind with mortar and pestle
  14. Transfer content of small bowl to large cast iron skillet
  15. Fry while stirring occasionally - 1 min
  16. Add ground turmeric
  17. Add ground coriander
  18. Add curry powder
  19. Fry while stirring occasionally - 3 min
  20. Add prepared chicken thighs
  21. Fry while stirring occasionally - 5 min, high heat
  22. Add water
  23. Add salt & pepper
  24. Boil and cover
  25. Reduce heat
  26. Cook gently until cooked through and turn off heat - 25 min
  27. Add beaten plain yogurt and mix
  28. Serve immediately
  29. Garnish with prepared cilantro
