Step preview

  1. Add parsnip, potato, salt and water to a clean large saucepan
  2. Cook until tender - 15 min
  3. Add olive oil to a clean large cast iron skillet
  4. Heat
  5. Add onion to the large cast iron skillet
  6. Cook until softened - 3 min
  7. Add lamb chop to the large cast iron skillet
  8. Season
  9. Cook evenly until browned
  10. Transfer content of large cast iron skillet to plate then set aside
  11. Add red wine, dijon mustard, balsamic vinegar and rosemary to the large cast iron skillet
  12. Boil
  13. Simmer until thickened
  14. Transfer meat to large cast iron skillet
  15. Heat until heated through
  16. Drain vegetables
  17. Add crème fraîche and black pepper to the vegetables
  18. Mash with potato masher
  19. Serve
