  16. Cook evenly until browned
  17. Transfer content of large cast iron skillet to plate then set aside
  18. Get large cast iron skillet
  19. Add red wine
  20. Add dijon mustard
  21. Add balsamic vinegar
  22. Add chopped rosemary
  23. Boil
  24. Simmer until thickened
  25. Transfer meat to large cast iron skillet
  26. Heat until heated through
  27. Drain vegetables
  28. Add crème fraîche
  29. Add black pepper
  30. Mash with potato masher
  31. Serve
