A leftover chicken carcass and a few vegetables are all it takes to create the warming, flavorful broth that forms the base of this hearty pasta soup. Any filled pasta would work beautifully in this recipe.

    Method

  • 1. Place chicken carcass in the cooker bowl
  • 2. Add water, onion, celery stalk, carrot, fresh thyme, black peppercorns and salt and cover
  • 3. Cook in slow cooker - 7 hr, high heat
  • 4. Remove the meat, cut into pieces and reserve
  • 5. Add tortellini, spinach and tomato to the slow cooker bowl and cover
  • 6. Cook in slow cooker - 25 min, high heat
  • 7. Add chicken back and serve
  • 8. Garnish with parmesan cheese
