A light and fragrant halibut tagine with the warming flavours of coriander, cumin and orange, while dates add sweetness.

    Method

  • 1. Add halibut steak to a clean cutting board and season with salt & pepper
  • 2. Heat olive oil in a clean large cast iron skillet
  • 3. Add orange peel and onion and sauté gently - 5 min
  • 4. Add cumin seeds, coriander seeds and garlic cloves and fry - 3 min
  • 5. Add halibut and turn the fish until it is coated in spices
  • 6. Crumble saffron threads over the top
  • 7. Pour orange juice and fish stock
  • 8. Sprinkle with dates and slivered almonds and cover
  • 9. Cook until cooked through - 25 min
  • 10. Season with salt & pepper to taste
  • 11. Serve
