Step preview

  1. Add olive oil and sweet potato to a clean medium bowl
  2. Toss
  3. Season with salt & pepper well
  4. Cook each side until lightly browned - 3 min, high heat
  5. Add olive oil and white wine vinegar to a clean medium bowl
  6. Season with salt & pepper to taste
  7. Add baby spinach and red onion to the dressing
  8. Toss
  9. Transfer dressing to serving plate
  10. Transfer sweet potatoes to serving plate
  11. Arrange feta cheese, fresh chili and black olives in the serving plate
  12. Serve immediately
