Step preview

  1. Prep and set aside chicken breast: boned & skinned
  2. Prep and set aside shallot: halved
  3. Prep and set aside tarragon: chopped
  4. Get a clean medium cast iron skillet
  5. Add olive oil
  6. Add butter
  7. Heat
  8. Add prepared chicken breast
  9. Fry until just cooked - high heat
  10. Drain
  11. Get a clean slow cooker bowl
  12. Place content of medium cast iron skillet on slow cooker bowl
  13. Get medium cast iron skillet
  14. Add prepared shallot
  15. Cook until light golden - 5 min
  16. Stir in all purpose flour
  17. Mix in chicken stock gradually
  18. Mix in dry vermouth gradually
  19. Add tarragon
  20. Add salt & pepper
  21. Boil
  22. Retrieve slow cooker bowl
  23. Pour content of medium cast iron skillet into slow cooker bowl and cover
  24. Cook in slow cooker until cooked through - 4 hr, high heat
  25. Add chopped fresh chives
  26. Add prepared tarragon
  27. Add heavy cream
  28. Serve
