This is the ultimate one pan meal. Stuffed port steaks are roasted alongside tended potatoes and apples and served with a pan gravy.

Step preview

  1. Pre-heat oven - 205°C
  2. Add pork filet to a clean cutting board
  3. Slice lengthwise
  4. Add hazelnuts to a clean food processor bowl
  5. Blitz until fine
  6. Add garlic clove, scallion, apricot and salt & pepper to the food processor bowl
  7. Blend until combined
  8. Stuff content of food processor bowl into meat
  9. Flatten
  10. Season with salt & pepper
  11. Add olive oil to a clean large roasting dish
  12. Heat - high heat
  13. Transfer meat to large roasting dish
  14. Sear each side until browned and turn off heat
  15. Transfer content of large roasting dish to plate
  16. Add potato, onion and olive oil to the large roasting dish
  17. Toss until combined
  18. Roast until light golden - 40 min, 205°C
  19. Transfer meat to large roasting dish
  20. Roast - 15 min, 205°C
  21. Add cooking apple to the large roasting dish
  22. Roast until cooked through - 20 min, 205°C
  23. Transfer content of large roasting dish to serving plate
  24. Add all purpose flour and cider to the large roasting dish
  25. Mix with tablespoon until thickened
  26. Season to taste
  27. Serve immediately
