Step preview

  1. Prep and set aside garlic clove: crushed
  2. Prep and set aside scallion: finely chopped
  3. Prep and set aside apricot: finely chopped
  4. Prep and set aside potato: cubed
  5. Prep and set aside onion: sliced
  6. Prep and set aside cooking apple: peeled, cored & sliced
  7. Pre-heat - 205°C
  8. Get a clean cutting board
  9. Add pork filet
  10. Slice lengthwise
  11. Get a clean food processor bowl
  12. Add hazelnuts
  13. Blitz until fine
  14. Add prepared garlic clove
  15. Add prepared scallion
  16. Add prepared apricot
  17. Add salt & pepper
  18. Blend until combined
  19. Stuff content of food processor bowl into meat
  20. Flatten
  21. Season with salt & pepper
  22. Get a clean large roasting dish
  23. Add olive oil
  24. Heat - high heat
  25. Transfer meat to large roasting dish
  26. Sear each side until browned and turn off heat
  27. Transfer content of large roasting dish to plate
  28. Get large roasting dish
  29. Add prepared potato
  30. Add prepared onion
  31. Add olive oil
  32. Toss until combined
  33. Roast until light golden - 40 min, 205°C
  34. Transfer meat to large roasting dish
  35. Roast - 15 min, 205°C
  36. Add prepared cooking apple
  37. Roast until cooked through - 20 min, 205°C
  38. Transfer content of large roasting dish to serving plate
  39. Get large roasting dish
  40. Add all purpose flour
  41. Add cider
  42. Mix with tablespoon until thickened
  43. Season to taste
  44. Serve immediately
