Chorizo adds Spanish smokiness to this chunky bean stew. Olives are optional, but highly recommended! Serve with hot peppered foccacia or garlic bread and a green leafy salad.

Step preview

  1. Prep and set aside chorizo: sliced
  2. Prep and set aside red onion: chopped
  3. Prep and set aside canned navy beans: drained
  4. Prep and set aside garlic clove: finely chopped
  5. Prep and set aside frankfurter sausage: drained & sliced
  6. Prep and set aside vegetable stock: boiling
  7. Get a clean slow cooker bowl
  8. Place prepared chorizo
  9. Place prepared red onion
  10. Place prepared canned navy beans
  11. Add cherry tomatoes
  12. Add prepared garlic clove
  13. Add rosemary
  14. Mix together
  15. Arrange prepared frankfurter sausage on top
  16. Get a clean medium bowl
  17. Add prepared vegetable stock
  18. Add tomato paste
  19. Add salt & pepper
  20. Mix with tablespoon
  21. Retrieve slow cooker bowl
  22. Pour stock mixture into slow cooker bowl and cover
  23. Cook to slow cooker for 5h on high heat
  24. Stir
  25. Serve
