Chorizo adds Spanish smokiness to this chunky bean stew. Olives are optional, but highly recommended! Serve with hot peppered foccacia or garlic bread and a green leafy salad.
Ingredients
Chorizo115 gsliced
Red onion1chopped
Canned navy beans765 gdrained
Garlic clove2finely chopped
Frankfurter sausage325 gdrained, sliced
Vegetable stock180 mlboiling
Cherry tomatoes300 g
Fresh rosemary3 sprigs
Tomato paste1 tablespoon
Salt & pepperas needed
Method
1. Place chorizo, red onion and canned navy beans on a clean slow cooker bowl
2. Add cherry tomatoes, garlic clove and rosemary
3. Mix together
4. Arrange frankfurter sausage in the slow cooker bowl on top
5. Add vegetable stock, tomato paste and salt & pepper to a clean medium bowl
6. Mix with tablespoon
7. Pour stock mixture into slow cooker bowl and cover
8. Cook in slow cooker - 5 hr, high heat
9. Stir
10. Serve
