This chunky soup is a big bowl of goodness, packed with healthy beans and vegetables. Crème fraîche or heavy cream adds a touch of indulgence, but feel free to leave it out if you want a lighter soup. Serve with warm focaccia.

Step preview

  1. Add olive oil to a clean saucepan
  2. Heat
  3. Add onion to the saucepan
  4. Sauté gently until softened - 5 min
  5. Stir in garlic clove and smoked paprika the saucepan
  6. Cook briefly
  7. Add butternut squash, carrot, tomato and canned mixed beans to the saucepan
  8. Pour vegetable stock into the saucepan
  9. Season with salt & pepper to taste
  10. Boil while stirring occasionally
  11. Cover
  12. Simmer until tender - 25 min
  13. Add crème fraîche and kale to the saucepan
  14. Cover
  15. Cook - 5 min
  16. Get a clean medium bowl
  17. Ladle content of saucepan into medium bowl
  18. Serve
