A food processor makes light work of creating a fragrant, punchy paste to coat these fish skewers. They cook quickly, so they're ideal served with sautéed greens or a leafy salad for a delicious meal in minutes.

Step preview

  1. Pre-heat broiler - high heat
  2. Add garlic clove, shallot, lemongrass stalk, ground turmeric, fresh chili, ground ginger and salt & pepper to a clean food processor bowl
  3. Process
  4. Add peanut oil and fish sauce to the spices
  5. Process until thickened while machine is running
  6. Transfer spices to medium bowl
  7. Add fish fillet to the fish
  8. Toss and cover
  9. Refrigerate in fridge - 15 min
  10. Arrange
  11. Line a clean baking pan with foil
  12. Transfer fish to baking pan
  13. Broil evenly until browned - high heat
  14. Sprinkle with cilantro
  15. Serve
