  1. Prep and set aside garlic clove: peeled
  2. Prep and set aside shallot: chopped
  3. Prep and set aside lemongrass stalk
  4. Prep and set aside ground turmeric
  5. Prep and set aside fresh chili: seeded & chopped
  6. Prep and set aside ground ginger
  7. Prep and set aside salt & pepper
  8. Prep and set aside fish fillet: boned & diced
  9. Prep and set aside cilantro: chopped
  10. Pre-heat on high heat
  11. Get a clean food processor bowl
  12. Add prepared garlic clove
  13. Add prepared shallot
  14. Add prepared lemongrass stalk
  15. Add prepared ground turmeric
  16. Add prepared fresh chili
  17. Add prepared ground ginger
  18. Add prepared salt & pepper
  19. Process
  20. Add peanut oil
  21. Add fish sauce
  22. Process until thickened while machine is running
  23. Transfer spices to medium bowl
  24. Add prepared fish fillet
  25. Toss and cover
  26. Refrigerate in fridge for 15min
  27. Arrange
  28. Line a baking pan with foil
  29. Transfer fish to baking pan
  30. Broil evenly on high heat until browned
  31. Sprinkle with prepared cilantro
  32. Serve
