Sweet potato and chorizo pair beautifully together in this tasty and filling hash. Delicious for lunch or dinner, this recipe really comes into its own when served with eggs for brunch.

    Ingredients

  • Onion icon

  • Chorizo icon

    Method

  • 1. Heat olive oil in a clean medium cast iron skillet
  • 2. Add chorizo and cook until light golden - 2 min, then transfer to plate
  • 3. Add onion to the skillet and cook until soft while stirring occasionally - 3 min
  • 4. Add sweet potatoe and cook gently until tender - 10 min
  • 5. Season with salt & pepper to taste
  • 6. Return chorizo to the skillet
  • 7. Cook until heated through
  • 8. Add lemon juice, capers and pesto to a clean medium bowl and mix
  • 9. Transfer sweet potatoes mixture to serving plate
  • 10. Drizzle with pesto and serve
