Method
1. Heat olive oil in a clean medium cast iron skillet
2. Add chorizo and cook until light golden - 2 min, then transfer to plate
3. Add onion to the skillet and cook until soft while stirring occasionally - 3 min
4. Add sweet potatoe and cook gently until tender - 10 min
5. Season with salt & pepper to taste
6. Return chorizo to the skillet
7. Cook until heated through
8. Add lemon juice, capers and pesto to a clean medium bowl and mix
9. Transfer sweet potatoes mixture to serving plate
10. Drizzle with pesto and serve
