  1. Add olive oil to a clean medium cast iron skillet
  2. Heat
  3. Add chorizo to the medium cast iron skillet
  4. Cook until light golden - 2 min
  5. Transfer sweet potatoes to plate
  6. Add onion to the medium cast iron skillet
  7. Cook until soft while stirring occasionally - 3 min
  8. Add sweet potato to the sweet potatoes
  9. Cook gently until tender - 10 min
  10. Season with salt & pepper to taste
  11. Return chorizo to sweet potatoes
  12. Cook until heated through
  13. Add lemon juice, capers and pesto to a clean medium bowl
  14. Mix
  15. Transfer sweet potatoes to serving plate
  16. Drizzle sweet potatoes with Pesto
  17. Serve
