  1. Prep and set aside onion: chopped
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside fresh oregano: chopped
  4. Get a clean Dutch oven
  5. Heat olive oil
  6. Add prepared onion
  7. Cook until softened
  8. Add prepared garlic clove
  9. Cook - 3 min
  10. Crumble skinned sausage
  11. Add fennel seeds
  12. Cook until light golden - 10 min
  13. Stir in red wine
  14. Stir in tomato sauce
  15. Stir in tomato paste
  16. Stir in prepared fresh oregano
  17. Simmer
  18. Cook until thick - 30 min, low heat
  19. Season with salt & pepper to taste
  20. Pre-heat - medium heat
  21. Crumble instant polenta
  22. Sprinkle with parmesan cheese
  23. Sprinkle with cheddar cheese
  24. Broil until melted - 5 min, medium heat
  25. Serve
