  1. Prep and set aside cod fillet: skinned
  2. Prep and set aside garlic clove: sliced
  3. Prep and set aside spinach: drained
  4. Pre-heat - 190°C
  5. Prepare a clean work surface
  6. Add prepared cod fillet
  7. Season with salt & pepper
  8. Transfer fish to medium roasting dish
  9. Drizzle with extra virgin olive oil
  10. Sprinkle with raisins
  11. Sprinkle with pine nuts
  12. Bake until cooked through - approx 20 min, 190°C
  13. Sprinkle with prepared garlic clove
  14. Add prepared spinach
  15. Season with salt & pepper
  16. Bake - 5 min, 190°C
  17. Serve
  18. Serve rustic french bread
  19. Spoon
  20. Garnish with lemon
