Chicken noodle soup is a classic pick-me-up when we're feeling under the weather, and this recipe makes the most of a leftover chicken carcass to add buckets of flavour.

Step preview

  1. Add chicken carcass, onion, carrot, celery stalk, bouquet garni and water to a clean slow cooker bowl
  2. Season with salt & pepper
  3. Cook in slow cooker - 6 hr, high heat
  4. Strain with sieve
  5. Add vermicelli to the slow cooker bowl
  6. Cook in slow cooker until just cooked - 20 min, high heat
  7. Garnish with fresh parsley
  8. Serve
