A homemade approximation of cheeze-its or goldfish. You can remove a little cheddar and add some parmesan for variety. Make sure to roll them thin, but not too thin, and cut them small for maximum crunchiness.

Step preview

  1. Prep and set aside unsalted butter: cold
  2. Prep and set aside cheddar cheese: grated
  3. Get a clean food processor bowl
  4. Add all purpose flour
  5. Add salt
  6. Add black pepper
  7. Pulse briefly
  8. Add prepared unsalted butter
  9. Pulse until coarse crumbs form
  10. Add prepared cheddar cheese gradually
  11. Pulse until coarse crumbs form
  12. Add water bit by bit while mixing
  13. Transfer dough to large resealable plastic bag
  14. Refrigerate overnight
  15. Transfer dough to baking sheet
  16. Roll out until 1/8" (5mm) thick
  17. Cut
  18. Bake until golden brown - 15 min, 175°C
