Step preview

  1. Add chicken breast, chicken stock, lemon and fresh thyme to a clean large saucepan
  2. Simmer gently and cover
  3. Cook until cooked through - 15 min, medium-low heat
  4. Remove with slotted spoon
  5. Shred
  6. Boil
  7. Season with salt & pepper
  8. Add tortellini to the large saucepan
  9. Cook - approx 3 min
  10. Transfer
  11. Serve immediately
  12. Scatter parmesan cheese over the large saucepan to taste
