A quick and healthy pasta recipe that's super simple to make. As you're using few, basic ingredients try to get fresh seafood if you can. Juicy tomatoes, sweet jumbo shrimp, and hot diced chili make an impressive but simple sauce for al dente spaghetti. Even better with garlic bread and a glass of wine. The perfect midweek dinner.

  1. Pre-heat oven - 220°C
  2. Add olive oil, scallion, garlic clove and fresh chili to a clean large roasting dish
  3. Cook - 5 min, 220°C
  4. Add tomato to the tomatoes
  5. Sprinkle with salt
  6. Cook - 5 min, 220°C
  7. Add water and salt to a clean large saucepan
  8. Boil
  9. Add spaghetti to the large saucepan
  10. Cook until al dente
  11. Drain
  12. Return
  13. Stir tomatoes into large saucepan
  14. Get a clean large roasting dish
  15. Transfer content of large saucepan to large roasting dish
  16. Scatter shrimps over the large roasting dish
  17. Brush with olive oil
  18. Cook until cooked through - 8 min, 220°C
  19. Serve
