  1. Prep and set aside fresh thyme: finely chopped
  2. Prep and set aside lemon: zest of
  3. Prep and set aside chicken thighs: boned & skinned
  4. Prep and set aside lemon: juice of
  5. Get a clean medium bowl
  6. Add ground sumac
  7. Add prepared fresh thyme
  8. Add prepared lemon
  9. Add olive oil
  10. Mix
  11. Season to taste
  12. Add prepared chicken thighs
  13. Rub in until coated then set aside
  14. Heat a medium cast iron skillet
  15. Add pita bread
  16. Cook for approx 4min until lightly browned then set aside
  17. Get medium cast iron skillet
  18. Cook for approx 10min until cooked through then set aside
  19. Transfer chicken to medium cast iron skillet
  20. Squeeze prepared lemon
  21. Transfer content of medium cast iron skillet to serving plate
  22. Add hummus
  23. Serve arugula
