  1. Prep and set aside fresh thyme: finely chopped

  13. Rub in until coated then set aside
  14. Heat a clean medium cast iron skillet
  15. Add pita bread
  16. Cook until lightly browned then set aside - approx 4 min
  17. Get
  18. Transfer chicken to medium cast iron skillet
  19. Cook until cooked through then set aside - approx 10 min
  20. Squeeze prepared lemon
  21. Transfer content of medium cast iron skillet to serving plate
  22. Add hummus
  23. Serve arugula
