  1. Add ground sumac, fresh thyme, lemon and olive oil to a clean medium bowl
  2. Mix
  3. Season to taste
  4. Add chicken thighs to the chicken
  5. Rub in until coated then set aside
  6. Heat a clean medium cast iron skillet
  7. Add pita bread to the medium cast iron skillet
  8. Cook until lightly browned then set aside - approx 4 min
  9. Get
  10. Transfer chicken to medium cast iron skillet
  11. Cook until cooked through then set aside - approx 10 min
  12. Squeeze lemon into the medium cast iron skillet
  13. Transfer content of medium cast iron skillet to serving plate
  14. Add hummus to the serving plate
  15. Serve with arugula
