Sweet and citrusy, this chicken dish uses the entire lemon to inject buckets of flavor with just a few ingredients. This works with a whole chicken separated into pieces, or a mix of thighs and drumsticks. Make a meal of it with salad and baked potatoes.

Step preview

  1. Arrange whole chicken in a clean baking dish
  2. Crush garlic clove a clean small bowl
  3. Add honey, lemon and fresh chili to the mixture
  4. Mix well with tablespoon
  5. Pour mixture into chicken
  6. Add lemon peel to the chicken
  7. Marinate in fridge - 2 hr
  8. Pre-heat oven - 200°C
  9. Turn skin side up
  10. Scatter garlic clove over the chicken
  11. Cook until golden brown - 45 min, 200°C
  12. Stir in fresh parsley to the chicken
  13. Season with salt & pepper
  14. Serve immediately
