Sweet and citrusy, this chicken dish uses the entire lemon to inject buckets of flavor with just a few ingredients. This works with a whole chicken separated into pieces, or a mix of thighs and drumsticks. Make a meal of it with salad and baked potatoes.

Step preview

  1. Prep and set aside lemon: quartered & peeled
  2. Prep and set aside fresh chili: deseeded & chopped
  3. Prep and set aside garlic clove: peeled
  4. Prep and set aside fresh parsley: coarsely chopped
  5. Get a clean baking dish
  6. Arrange separated whole chicken
  7. Get a clean small bowl
  8. Crush garlic clove
  9. Add honey
  10. Add prepared lemon
  11. Add prepared fresh chili
  12. Mix well with tablespoon
  13. Pour mixture into chicken
  14. Add lemon peel
  15. Marinate in fridge for 2h
  16. Pre-heat
  17. Turn skin side up
  18. Scatter prepared garlic clove
  19. Cook for 45min until golden brown
  20. Stir in prepared fresh parsley
  21. Season with salt & pepper
  22. Serve immediately
