Step preview

  1. Prep and set aside eggplant: halved lengthways & finely sliced
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside fresh basil: torn
  4. Get a clean frying pan
  5. Add olive oil
  6. Heat in frying pan until simmering
  7. Add prepared eggplant
  8. Fry gently in frying pan until light golden
  9. Transfer content of frying pan to plate
  10. Pat dry with paper towels
  11. Get a clean frying pan
  12. Add olive oil
  13. Heat in frying pan on medium heat
  14. Add prepared garlic clove
  15. Cook in frying pan for approx 30s
  16. Add canned chopped tomatoes
  17. Transfer eggplant to frying pan
  18. Boil in frying pan
  19. Reduce heat for 20min to simmer
  20. Get a clean large saucepan
  21. Add salt
  22. Add water
  23. Boil
  24. Add rigatoni pasta
  25. Cook until al dente
  26. Drain
  27. Transfer pasta to frying pan
  28. Add with tablespoon
  29. Stir on low heat
  30. Stir in prepared fresh basil
  31. Stir in ricotta cheese
  32. Stir in pecorino cheese
  33. Season with salt & pepper to taste
