  • Pancetta icon

    200g (about 1¼ cups)

  • Fresh parsley icon

    3 tbsp (12g)
  • Single cream icon

    3 tbsp (44ml)

Step preview

  1. Add salt to a clean large saucepan
  2. Boil
  3. Add water and spaghetti to the pasta
  4. Cook until al dente
  5. Add olive oil to a clean frying pan
  6. Heat in frying pan
  7. Add pancetta to the frying pan
  8. Fry in frying pan until crispy - 5 min, high heat
  9. Add egg, parmesan cheese, fresh parsley and single cream to a clean small bowl
  10. Beat until well combined
  11. Season with salt & pepper then set aside
  12. Drain pasta
  13. Transfer pasta to frying pan
  14. Cook in frying pan while stirring occasionally - low heat
  15. Pour egg mixture into frying pan
  16. Stir quickly
  17. Remove
  18. Stir until creamy
  19. Serve immediately
