Method
1. Pre-heat oven - 160°C/320°F
2. Add butter and olive oil to a clean Dutch oven
3. Melt - medium-high heat
4. Add lamb chop to the Dutch oven
5. Season with salt & pepper lightly
6. Sear evenly until browned
7. Add garlic clove, rosmeary, onion and chestnut mushrooms
8. Top with potato
9. Pour lamb stock into the Dutch oven and cover
10. Bake - 1 hr 30 min
11. Uncover and dot with butter
12. Bake until browned - 45 min
13. Serve
