  1. Prep and set aside onion: sliced
  2. Prep and set aside potato: finely sliced
  3. Pre-heat
  4. Get a clean Dutch oven
  5. Add butter
  6. Add olive oil
  7. Melt on medium-high heat
  8. Add lamb chop
  9. Season with salt & pepper lightly
  10. Sear evenly until browned
  11. Add crushed garlic clove
  12. Sprinkle with rosemary
  13. Add prepared onion
  14. Add halved chestnut mushroom
  15. Top with prepared potato
  16. Pour lamb stock and cover
  17. Bake for 1h 30min
  18. Uncover
  19. Dot with butter evenly
  20. Bake for 45min until browned
  21. Serve
