Step preview

  1. Pre-heat - 190°C
  2. Line 2 clean muffin pans with paper muffin cups
  3. Get a clean medium bowl
  4. Add cake flour
  5. Add powdered sugar
  6. Whisk briefly and set aside
  7. Get a clean large mixing bowl
  8. Add egg white
  9. Add vanilla extract
  10. Add cream of tartar
  11. Add salt
  12. Beat until foamy - medium speed
  13. Beat until soft peaks form - high speed
  14. Get a clean small bowl
  15. Add granulated sugar
  16. Whisk sugar mixture into batter gradually
  17. Fold dry ingredients into batter gradually
  18. Transfer batter to 2 muffin pans
  19. Bake until springy to touch - 10 min, 190°C
  20. Transfer onto cooling rack
  21. Decorate with sieve
