  1. Prep and set aside pork loin: boned
  2. Prep and set aside fennel bulb: finely sliced
  3. Prep and set aside garlic clove: crushed
  4. Prep and set aside fennel seeds: crushed
  5. Pre-heat - 150°C
  6. Get a clean frying pan
  7. Add olive oil
  8. Add prepared pork loin
  9. Season with salt & pepper
  10. Sear evenly in frying pan until browned
  11. Transfer content of frying pan to Dutch oven
  12. Get frying pan
  13. Add prepared fennel bulb
  14. Fry gently in frying pan until softened - 5 min
  15. Transfer content of frying pan to Dutch oven
  16. Add prepared garlic clove
  17. Add prepared fennel seeds
  18. Add milk
  19. Season to taste and cover
  20. Cook until tender - 1 hr 30 min, 150°C
  21. Remove and reserve liquid
  22. Let rest - 20 min
  23. Cook in frying pan until thickened
  24. Serve
