  1. Add olive oil to a clean large saucepan
  2. Heat - medium heat
  3. Add chicken pieces to the large saucepan
  4. Season with salt & pepper
  5. Sear evenly until browned
  6. Get a clean plate
  7. Transfer content of large saucepan to plate
  8. Add onion, celery stalk and pancetta to the large saucepan
  9. Fry gently - 10 min
  10. Add garlic clove and bay leaves to the large saucepan
  11. Fry gently - 1 min
  12. Add white wine, canned tomatoes, caster sugar and tomato paste to the large saucepan
  13. Season with salt & pepper
  14. Transfer chicken to large saucepan
  15. Simmer gently until tender - 1 hr, low heat
  16. Stir in black olives and fresh basil to the large saucepan
  17. Serve
