  3. Get a clean large saucepan
  4. Add olive oil
  5. Heat on medium heat
  6. Add chicken pieces
  7. Season with salt & pepper
  8. Sear evenly until browned
  9. Get a clean plate
  10. Transfer content of large saucepan to plate
  11. Retrieve large saucepan
  12. Add onion
  13. Add prepared celery stalk
  14. Add pancetta
  15. Fry gently for 10min
  16. Add garlic clove
  17. Add bay leaves
  18. Fry gently for 1min
  19. Add white wine
  20. Add canned tomatoes
  21. Add caster sugar
  22. Add tomato paste
  23. Season with salt & pepper
  24. Transfer chicken to large saucepan
  25. Simmer gently for 1h on low heat until tender
  26. Stir in black olives
  27. Stir in prepared fresh basil
  28. Serve
