  1. Add mussels to a clean colander
  2. Clean
  3. Melt butter a clean saucepan
  4. Add onion and garlic clove to the saucepan
  5. Fry gently until softened - approx 2 min
  6. Transfer content of colander to saucepan
  7. Add white wine to the saucepan
  8. Cover
  9. Cook - approx 5 min
  10. Uncover
  11. Add single cream to the saucepan
  12. Heat briefly
  13. Add fresh parsley to the saucepan
  14. Season with salt & pepper
  15. Serve
