Step preview

  1. Prep and set aside avocado: peeled, pitted & diced
  2. Prep and set aside chicken breast: cooked & shredded
  3. Prep and set aside red onion: finely sliced
  4. Prep and set aside cherry tomatoes: halved
  5. Heat a frying pan in frying pan on medium-high heat
  6. Add pumpkin seeds
  7. Fry for 2min on medium-high heat until light golden while stirring occasionally
  8. Get a clean food processor bowl
  9. Add prepared avocado
  10. Add lime juice
  11. Add dijon mustard
  12. Blend until smooth
  13. Season with salt & pepper to taste
  14. Get a clean large mixing bowl
  15. Add prepared chicken breast
  16. Add prepared red onion
  17. Add prepared cherry tomatoes
  18. Add mixed salad leaves
  19. Transfer seeds to salad
  20. Toss until well combined
  21. Pour dressing into salad
  22. Serve rustic french bread
