  1. Prep and set aside orange: zest of

  4. Prep and set aside cilantro: coarsely chopped
  5. Get a clean glass baking dish
  6. Add prepared orange
  7. Add juice of orange
  8. Add zest of lime
  9. Add juice of lime
  10. Add prepared fresh chili
  11. Add sunflower oil
  12. Add finely chopped garlic clove
  13. Add muscovado sugar
  14. Add crushed cumin seeds
  15. Mix
  16. Add boned, skinned, cubed chicken breast
  17. Toss well and cover
  18. Chill in fridge - 2 hr
  19. Pre-heat
  20. Retrieve
  21. Skewer
  22. Cook until cooked through then set aside
  23. Transfer chicken to serving plate
  24. Garnish with prepared lemon
  25. Garnish with prepared cilantro
  26. Serve
