Step preview

  1. Add water and salt to a clean saucepan
  2. Boil
  3. Add tagliatelle to the pasta
  4. Cook until al dente
  5. Add olive oil, garlic clove and shallot to a clean saucepan
  6. Cook while stirring occasionally - 3 min, medium heat
  7. Add peas, fresh broad beans, asparagus and spinach to the vegetables
  8. Cook while stirring occasionally - 2 min, medium heat
  9. Add heavy cream to the vegetables
  10. Simmer - 3 min, medium heat
  11. Drain pasta
  12. Transfer pasta to vegetables
  13. Season with salt & pepper generously
  14. Add parmesan cheese and mint to the vegetables
  15. Toss with slotted spoon
  16. Serve immediately
