Step preview

  1. Add garlic clove, dried chilies, sea salt, ground turmeric, lemongrass stalk and shrimp paste to a clean food processor bowl
  2. Blend until smooth
  3. Transfer content of food processor bowl to large saucepan
  4. Stir in fish sauce to the large saucepan
  5. Add caster sugar, lemongrass stalk and water to the large saucepan
  6. Mix until combined
  7. Boil gently
  8. Simmer gently - 8 min, medium-low heat
  9. Add lemon juice, tamarind paste and water to a clean small bowl
  10. Mix with tablespoon
  11. Transfer content of small bowl to large saucepan
  12. Add pineapple to the large saucepan
  13. Stir until completely mixed
  14. Add salmon steak to the large saucepan
  15. Simmer gently until cooked through - 10 min, low heat
  16. Serve
