Step preview

  1. Prep and set aside lemongrass stalk: beaten
  2. Get a clean food processor bowl
  3. Add garlic clove
  4. Add dried chilies
  5. Add sea salt
  6. Add ground turmeric
  7. Add lemongrass stalk
  8. Add shrimp paste
  9. Blend until smooth
  10. Transfer content of food processor bowl to large saucepan
  11. Stir in fish sauce
  12. Add caster sugar
  13. Add prepared lemongrass stalk
  14. Add water
  15. Mix until combined
  16. Boil gently
  17. Simmer gently for 8min on medium-low heat
  18. Get a clean small bowl
  19. Add lemon juice
  20. Add tamarind paste
  21. Add water
  22. Mix with tablespoon
  23. Transfer content of small bowl to large saucepan
  24. Add pineapple
  25. Stir until completely mixed
  26. Add salmon steak
  27. Simmer gently for 10min on low heat until cooked through
  28. Serve
